Grilled Lemon-Herb Chicken
Okay- So just imagine your afternoon is jammed with activities and you are not thinking about dinner tonight until after 6:00pm and the last thing you want to do when you walk in the door after a hot, busy, stressful day is begin cooking. Because cooking means cleaning and by the time you get your ingredients organized, then cook, and then clean up the kitchen it’ll be 9:00pm-ish and you’ll just be ready for bed!
I highly recommend that at least once a week you get “dinner in the bag”. Think of it as an investment in future relaxation-you need to take 10 minutes in the morning (or the night before) to prep your food. Then when you get home from work all hot (we’re always hot in Atlanta right now) and tired you just pour yourself a nice cold glass of white wine, light the grill and put on some comfortable clothes! You’ll be able to decompress tonight while you cook! And there’s very little clean up because you are grilling and your kitchen will stay cool because you are cooking outside! Here’s one way to get dinner in the bag!
Lemon-Herb Chicken & Grilled Asparagus
Serves 4
Takes 5 minutes to prep and 12 minutes to cook
Costs about $4/person
2 Tbs. Honey
¼ Tsp. Dijon mustard
Juice of 2 Lemons
2 Tbs. Fresh oregano, chopped (or 1 tbs. dried oregano)
Salt & Pepper to taste
¼ C Olive oil
4 Boneless, skinless chicken breasts
Whisk 1st 6 ingredients in medium bowl
Set aside 3 tbs. marinade
Pour remaining marinade into a gallon zip lock bag and add chicken
Place bag in fridge Allow chicken to marinate at least 30 minutes
Heat or grill pan over medium high to high heat (400ish degrees)
Grill chicken 6-8 minutes each side-until done
Remove chicken from grill, let rest 5 minutes and drizzle with reserved marinade
Grilled Asparagus
1 ½ Lbs Asparagus, washed & trimmed
2 Tbs. Olive oil
Salt & Pepper to taste
Place all ingredients in a large zip-lock bag and mix ingredients around in bag to evenly coat asparagus
Store asparagus in fridge until ready to cook
Heat grill or grill pan over medium high to high heat (400ish degrees)
Arrange asparagus on grill and grill for 10-15 minutes-until asparagus has nice grill marks and is the desired consistency when tasted…
